Fauchon Calisson From Aix En Provence

‌The Calisson is a speciality from Aix-en-Provence made with a mixture of finely ground sweet almonds, candied melon and orange peel, with a thin wafer on the bottom and topped with white icing. In keeping with the traditional recipe, this calisson has two textures; the crispiness of the icing and the softness of the dough. The flavours of almond, melon and orange peel are perfectly balanced.

‌Candied melon (melon, glucose-fructose syrup, sugar), almonds 29% (of which 5% from Provence), sugar, egg white, candied fruits (orange and lemon peels, glucose-fructose syrup, sugar), glucose syrup, invert sugar syrup, unleavened bread (potato starch, sunflower oil), natural flavourings.
